Cheesemonger's pick of the week: St. Nectaire. Ours is a pasteurized version of this French cow's milk classic from the Auvergne region. Volcanic soil beneath lush mountainous pasture translates into a subtle minerality in the cheese. As washed rinds go, St. Nectaire is a little more subdued than others in its class.
